Potato Leek Soup


Potato Leek Soup




INGREDIENTS
3 Large Leeks – chopped
3 Scallions – chopped
3 cloves of garlic – smashed
4 potatoes - skinned

STOCK
4 tbsp. butter – sliced
3 cups water
4 cups milk
1 cup pinot grigio
3 ¾ cup chicken broth (30 oz.)
1 ½ package white extra sharp cheddar cheese

SPICES Sprinkle for taste..
Paprika
Parsley
Turmeric
Black pepper

LET THE PREPPING BEGIN…
Boil potatoes until soft. 

In separate large pot, on low heat, melt butter, add chopped leeks, scallions and garlic. Cook at medium heat, stirring occasionally, until soft and wilted. 

Add water, milk, wine and broth.  Stir and add potatoes.   Continue stirring and let cook for about 5 minutes.    Stir in cheese and spices.  Continue stirring until cheese has melted.   Cook for 2-3 minutes.

Pour soup into a blender (may have to split it into two batches), blend soup.  Soup should have a thick consistency to it.   You don't want it to be chunky or completely liquefy it.    Pour back into pot on stove and cook at low heat for 20 minutes or so, until soup thickens up.

Broccoli garlic jalapeño side dish




This spicy super green good will heat you up and have you coming back for more!

2 heads of broccoli
2 tsp olive oil
4 garlic cloves, minced
¼ to ½ jalapeno, diced
pinch of kosher salt
pinch of black pepper
Preheat oven to 450.
Toss the broccoli florets with garlic, jalapeños, olive oil, salt and pepper in a bowl. Lay out onto a cookie sheet and roast for about 20 minutes or until crispy/charred.

serve over rice with chicken, ground turkey or bison.  If you find it's too spicy, put a teaspoon of non-fat greek yogurt on top, to cool it down.

Bacon and Roasted Brussel Sprout Salad



Ingredients:
1 bag of fresh organic brussel sprouts
6-8 slices of smoked uncured organic bacon (I like the thick slices from whole foods)
1 lemon
1 regular size orange
1 large shallot, minced
½ cup extra virgin olive oil
½ cup chopped raw almonds
1 cup grated Pecorino-Romano Cheese (found in the Italian cheese section at whole foods)
Garlic Powder
Kosher Salt and Pepper for taste
Butter Cooking Spray

Let the prepping begin:
Pre-heat oven to 350 degrees.  Cut the ends off each brussel sprout, and then slice them into halves.   Place them on a cookie sheet and spray them with butter flavored cooking spray.  Sprinkle generously with garlic powder and black pepper.   Place in oven and bake for about 20 minutes.

In a skillet cook bacon over medium heat until crispy.   Let cool for a few minutes than chop the bacon into small pieces and set aside.

Chop or hammer out raw almonds and set aside.  Grate pecorino cheese and set aside. 

Remove brussel sprouts from oven and let cool off.  The sprouts should be a little crispy on top and somewhat tender all over but not mushy.  Once cool, chop the brussel sprouts.

In a bowl, drop in chopped brussel sprouts, bacon, cheese and almonds and blend together.

Dressing:
Get out a small mixing bowl.  Mince shallots and put in bowl.  Slice and juice lemon and orange into bowl, removing any seeds from the bowl.  Pour in olive oil and sprinkle a little black pepper and kosher salt for taste.  Whisk all ingredients together and set aside.

I like to blend the dressing over the salad then serve it up.


Simply refreshing…

Whey Green Drink




Ingredients
1 scoop whey protein
3/4 cup H20
2/3 cup mixed berries
1 tsp peanut butter
½ cup raw broccoli
1 tsp raw spirulina powder
1 tsp raw chlorella powder
1 tsp raw hemp seeds
Couple dashes of cinnamon
1 small package of splenda
Handful of ice

Let the prepping begin:
Pour all ingredients into a blender, bullet or juicer.   Blend and serve.  This is a complete meal with protein, fiber, fat and carbs...only 350 calories.


Absolutely sweet tasting…

Main Course: Curry Fennel Tilapia






It’s a complete meal…

Curry Fennel Tilapia
Broccolini
Couscous
Sautee’d Mushrooms

Ingredients
-Tilapia
-Broccolini
-1 small container of sliced mushrooms
-Seasonings: garlic powder, chili powder, yellow curry, fennel seed, black pepper
-Marsala wine
-Spray butter
-Nutritional yeast

Let the prepping begin:
Pre-heat oven to 350.  Place 1-3 Tilapia in a baking dish.  Spray one side of your Tilapia with butter and season with pepper, garlic powder and chili powder.  Turn the fish over, spray with butter and season with garlic powder, curry and fennel seed.  Place in oven and cook until fish is flaky.  About 20ish minutes.

Steam a basket full of broccolini, using water.  

In a skillet, pour ½ cup of water in a your skillet.  Pour container of mushrooms in and season with garlic powder.  Cook until your mushrooms start to become soft and pour 2 tablespoons of Marsala wine over your mushrooms.  Let cook for a few more minutes, remove from stove and drain juices.

For your couscous, you can either buy it in bulk or in a pre-packaged box.  Follow the cooking directions on the box.  I use extra virgin olive oil because it is lighter in flavor and better for you!

Once everything is cooked, it’s time to measure your portions and place on your lunch or dinner plate.  I typically measure about 3 oz of Talapia, 4-5 broccolini spears, 1/3 cup couscous and top with 1/3 cup mushrooms.  I sprinkle nutritional yeast on top of the broccolini and couscous/mushrooms.  Place all your extra food in containers and store in your fridge for another meal OR serve it up for the whole family to enjoy!

What am I eating?


     
      




      As most of you know, I was diagnosed with breast cancer on January 31, 2013.  I underwent a bi-lateral mastectomy on March 1, 2013.   I have eaten clean for a big part of my life and have always worked out.   3 years ago I dove into the bodybuilding sport and started competing.   Over my lifetime, I have been exposed to many diets as have many of you.  We have tried them all, have we not?  Some in fact work better than others.  The question is…can you eat that way all of your life and is it healthy?

      I would bet that most of us could not and did not stick to whatever diet it was that we tried.  It was either too restrictive or we didn’t find it satisfying.   I am just like all of you, only I like to think of myself as a product of my own study.   I have been on every diet you can think of, weight-watchers, atkins, south beach, low-fat, fat-free, high-protein, vegetarian, body for life and of course my competition diet.  One thing all these diets had in common was that they recommended you eat 5-6 meals each day.  These are mini meals to satisfy your hunger, keep your metabolism revving and ensuring your insulin levels were in balance.   Every “diet” has some restrictions.  The biggest is calories.  

      I’ve chosen to eat clean as a way of my life.  Have I eaten processed foods, cheeseburgers, pizza and chocolate…hello, of course I have.  Most of us do.   Do I eat them every day or every week, no I don’t.   I would say I eat them once a month.   I can still have these treats or foods of sins, even on the eating plan I have chosen for myself.   Instead of getting them at a restaurant or out of a box, I make them myself.  That’s for another time.
      
      I wanted to focus on what I have incorporated into my lifetime eating plan.  That’s right, I’m eating for life, not for dieting purposes.    Naturally I will lose weight and drop body fat, however I can increase my calories in order to maintain my physique.   For now, I have reduced my calories to allow for an 8 pound drop in weight and I’d like to drop a few %’s of body fat.  After I discovered I had breast cancer, I found comfort in foods I thought I would never eat on a daily basis.  My favorite was creamy macaroni and cheese.   While it was yummy at that time, there seem to have been many yummy moments like that over the month of February.   So I want to shave off the 8 pounds I put on during that emotional food fest.
     
      While I have an extensive background in food, how your body breaks it down, what puts weight on, what takes weight off, I am not a nutritionist, nor am I advocating this eating plan.  This plan works for me.  My body is being nourished down to the cellular level, which is important for cancer patients.  For preventative measures, we need to keep our cells as healthy as possible.   It doesn’t guarantee that you won’t get cancer, but it helps keep more cells healthy. 

      I’ve chosen to mix up all that I have learned from the past diets and from everything I researched on the internet to help cancer patients lower their chances of recurrence through better eating.  I used my competition eating practices as a foundation to lay out the plan.  My goal is to continue to keep a lean and muscular body.  I am not interested in being a skinny fat.   So I made sure I kept protein, both animal and or plant protein in each of my meals; including a vegetable complex carbohydrate.   This plan does not include dairy, sugar, bad fats or processed foods of any kind.  I am not eating grains because I’m not working out right now.  When I am able to lift again, to be able to maintain and maybe add a little muscle I will bring in quinoa, brown rice and sweet potatoes.
      
      I’m sure you are all on the edge of your seats waiting to see what I am eating on a daily basis ;-)   I thought it was important to layout the above foundation to help you understand how I arrived here.    The below daily intake is an example of what I have been eating.   I am measuring everything.  This is a practice I got into, when I was competing.  It’s become a habit and keeps your food intake in balance.  There’s no going back for seconds with this plan!

Breakfast:
1/3 cup oatmeal (I include everything in the oatmeal except for the eggs)
1/3 cup berries(I use blueberries, blackberries, strawberries or raspberries)
1 teaspoon of flaxseed oil
1 teaspoon walden foods sugar free, fat free, calorie free maple syrup (I’m sure it’s all chemicals…but I do love this product)
4 egg whites scrambled

Mid-morning snack
¾ scoop chocolate whey protein
1 tbs raw spirulina
1 tbs raw chlorella
1 tsp raw hemp seeds
1/4 c. blueberries

Lunch
2 cups organic wild greens
1 cup veggies (cooked mushrooms, heirloom tomatoes)
1 tbs chopped raw almonds
3 oz organic/free-range chicken breast
1 tbs homemade dressing (base is extra virgin olive oil, rice vinegar with a variety of seasonings)

Mid-afternoon snack
¾ scoop chocolate whey protein
½ tbs raw spirulina
½ tbs raw chlorella

      Dinner
1 cup cooked organic baby spinach
½ avocado
1/3 c. chopped strawberries
2.5 – 3 ounces of organic/free-range chicken breast

      I change the meals up, for instance today I will have broccoli instead of spring salad mix and I’ll roast cauliflower to throw into another day’s salad.  The idea here is to eat fresh whole foods and to eat every 2-3 hours.   I will also grill up some tilapia.  I do enjoy eating fish as well.  On days where I might be hungrier, I’ll have some celery with hummus as my 6th meal.   I may add a little more almonds here and there and won’t have avocado every day.  I have more fat in my diet right now because it’s great for healing the skin.  As I head back into the gym I will drop my fat intake and up my grains.    My body feels good right now, no stomach issues, no gagging from eating too much animal protein and my bowls are extremely regular!

Green protein shake

It's snack time and I'm going green. Here's my home made recipe...

3/4 scoop chocolate whey protein powder
1 tbs raw spirulina
1 tbs raw chlorella
1 tsp hemp seed
1/4 c. Frozen organic blueberries

This shake is approximately 200 calories is sugar free and low in fat.

It's very filling and leaves you sasiates until your next mini meal 2-3 hours later.

Butter Lime Talapia


Ingredients
3 oz. Talapia
Dill
Garlic Powder
Chili Powder
Fresh lime
Crisco non-stick butter, spray
1 tablespoon - I can not believe it’s not butter, spray

Let the prepping begin:
Pre-heat oven to 350.  Spray both sides of Talapia with Crisco non-stick butter spray, sprinkle garlic powder, chili powder and dill on both sides of the fish.  Place in a baking dish and cook until ready (about 20 minutes or until flaky).   Add tablespoon of I can’t believe it’s not butter spray and squeeze fresh lime on top.  Pop in the microwave for about 15 seconds until butter has blended with the fish/seasoning…plate and serve!

Apple Pie Oatmeal
















Apple Pie Oatmeal


Ingredients
1/3 cup plain oatmeal
1 healthy slice of green apple with skin, chopped
1 tsp flax oil
1 tsp Walden Farms Pancake Syrup (fat-free, calorie-free, sugar free)
Dash of cinnamon
Dash of splenda

Let the prepping begin:
Pour oatmeal, appropriate amount of water and apple into a microwave safe dish.  Cook on high for 1 minute.     Top with Walden Farms Pancake Syrup, a dash of cinnamon and splenda and serve.

Taste just like grandma’s apple pie without the fat, sugar and calories.   Simply delish!!!

Sweet Rosemary Chicken Breakfast Patty




Ingredients
4 oz ground chicken breast
Dash of Rosemary
Dash of Chili Powder
Teaspoon of Walden Farms Maple Syrup (fat-free, calorie-free, sugar free)

4 oz mashed sweet potatoes (I make a large batch and add cinnamon, 1-2 packs of splenda and some of Walden Farms Maple Syrup)


Let the prepping begin:
Heat a small skillet, spray with non-stick spray or spray butter.  In a bowl blend chicken, rosemary and chili powder together.  Create a patty and place in skillet  and cook both sides until done.  If you have pre-made your sweet potatoes, heat up 4 oz on a plate and top with your chicken patty.  Top with Walden Farms Maple Syrup (fat-free, calorie-free, sugar free). 

I eat this as one of my post-workout meals in the morning.  Let me tell ya, the patty taste more like a sausage over whipped mashed sweet potatoes.  It’s got all the right flavors for a breakfast meal!!!

Baked Tilapia over Spinach


Tilapia over Pesto Spinach




Ingredients
3 oz Tilapia
Dash of dill
Dash of Garlic powder
Dash of Chili powder
Non-stick butter spray
3 cups raw spinach
1 teaspoon of pesto

Let the prepping begin:
Pre-heat oven to 350.  Place tilapia filet in glass baking dish.  Spray one side with non-stick butter spray and sprinkle garlic powder, chili powder and dill on one side.  Turn the filet over and spray with non-stick butter spray, sprinkle garlic powder and chili powder.  Pop in oven to bake until fish is flaky (approx 15 min)

In heated skillet, a pesto.  Spread the pesto around the skillet so it covers the base of the pan.  Add spinach and stir making sure every leaf is covered with pesto.

Remove fish from oven.   Plate your spinach first and top with the baked Tilapia.   If you wanted to bulk this meal up a little, you could add 1/4 cup of brown rice.

Chocolate Chip PB Energy Bites






These are great bites to enjoy when you are on the run.
You only need one to satisfy your hunger!






Ingredients
1/2 cup peanut or almond butter
1/2 cup chocolate chips
1/3 cup honey
Dash of cinnamon
1 packet of splenda (optional)

Let the prepping begin:
Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for one hour. Once chilled, use a measuring spoon to scoop out each “ball” and roll into whatever size you like. Store in an airtight container and keep refrigerated for up to 1 week.

I enjoy one as a “bite” while I’m on the run or haven’t had time to whip up a meal.  It ties me over for about 30 minutes or so, until I can eat a meal.
