Go nutty for breakfast tomorrow








Try a bowl of warm quinoa that's bursting with tropical flavors and hint of cinnamon to spice things up!


Ingredients

1 cup low fat coconut milk

½ cup water

½ cup quinoa, ( rinse quinoa before cooking)

¼ cup fresh strawberries

1/4 teaspoon ground cinnamon

1 teaspoon chopped walnuts

Let the prepping begin:

Combine milk, water and quinoa in a medium saucepan. Bring to a boil over high heat. Reduce heat to medium-low; cover and simmer 15 minutes or until most of the liquid is absorbed. Turn off heat; let stand covered 5 minutes. Transfer to bowl and top with strawberries, cinnamon & walnuts.
