Cinnamon Oatmeal Cupcakes



















Often times in the body building sport, you get bored eating the same variation of food.  I'm always thinking of ways to create new recipes around my muscle building diet to bring out new texture and tastes.  This morning instead of having egg-whites and oatmeal or egg-white and oatmeal pancakes, I made cupcakes!   Traditional cupcakes are not allowed in our diet and for that reason you want them even more.   This recipe is the perfect way to feel like you are having a treat without the cheat! 

Ingredients
4 egg whites
1 whole egg
½ cup minute oatmeal
Dash of cinnamon (you can go as light or as heavy on flavor as your taste buds like)
1 tablespoon Walden Farms Pancake Syrup
Crisco Butter no-stick spray

Let the prepping begin:
Pre-heat oven to 350.  In a small bowl add eggs, oatmeal, cinnamon and syrup.  Blend in a blender or with a hand held mixer for about 10-15 seconds.  Spray 6 cups with Crisco no-stick spray.   Pour cupcake batter into each of the 6 cups until ¾ full.   Bake for 10 minutes and viola you have yourself 6 healthy cupcakes!  

These cupcakes are extremely low in fat, sugar-free, flour-free and packed with protein; the most powerful ingredient for building muscle or losing weight.  Yes, it is possible to have a meal like this and stay lean. I have a fair amount of healthy complex carbohydrates in my diet right now, in order to add more muscle to my frame while maintaining a lean physique.   I've been able to maintain between 10-12% body fat in my off season, eating this way.   My goal is to stay closer to 10%, which isn't always easy.  Just like everyone else, I have my moments where I crave something other than what's on the diet, so I allow myself a cheat here and there.  The less I cheat, the less work I'll have to do from a cardio standpoint as I get closer to competing.  We all gotta watch our cheats to keep the abs in view!    Until next time...
