Green leafy greek salad






This fresh and tangy salad is perfect on a hot summer day.


Ingredients

1 ½ cups green leaf lettuce

¼ cup chopped kalamata olives

¼ cup chopped tomatoes

¼ cup chopped cucumber

¼ cup low-fat feta cheese

1 tablespoon chopped red bell pepper

¼ cup chopped smoked turkey breast

Add sliced red onion for extra heat

1 tablespoon extra-virgin olive oil

1-1/2 teaspoon red wine vinegar or balsamic vinegar


Let the prepping begin:

Combine vegetables, olives, and feta cheese in a bowl. Combine oil and vinegar in a small plastic container with a lid. Shake vigorously to combine oil and vinegar and pour over salad and cheese.
