Saturday Oatmeal Pancakes







Oatmeal Pancakes

Ingredients:

1 ¼ cup plain oatmeal

2 cups fat-free milk

1 egg white

2 teaspoons safflower oil

1 tablespoon baking powder

¼ tsp vanilla

¼ cup wheat germ

¼ tsp cinnamon

Let the prepping begin:

In a medium bowl, mix oatmeal and milk; let stand for 8 minutes. Blend in the egg, wheat germ, baking powder, vanilla, cinnamon and oil; mixing until evenly blended and only small lumps are visible. Refrigerate the batter for 20 minutes.

Place large non-stick skillet on medium heat, coat with cooking spray. Pour the batter by ¼ cup and cook until the oatmeal starts to bubble or is light brown on both sides.

Top with plain yogurt and mixed berries.
